In the Spanish wine region Rueda it gets hot during the day. Yet this wine from Viña Salceda has a pleasant freshness. This is because the grapes are harvested at night. Early in the morning, the grapes are brought to the bodega and while they are still cool and fresh, they are immediately pressed. When making the wine, contact with oxygen is minimized.
