With normal washed coffee, the parchment (either pergamino or parchment) is removed when it is dry. In Indonesia this is not the case and the parchment is removed while the coffee is still wet. This is called giling basah and is unique in the coffee world. This is partly the cause of the distinct Indonesian taste.
